Filled with a delicious mix of chicken or turkey, Italian herbs and cheese, and all the grains of your choice, each pepper is filled with a healthy, nutritious dinner.
Every time I make pickled peppers, I’m reminded of how much fun they are in their mild form.

How To Make Stuffed Peppers
We’ve put peppers in every way imaginable – and if you don’t believe me, try our Cheesesteak and Chicken Parm varieties! –but we still love this recipe. Here we’re topping them with beef tomato rice and Monterey Jack cheese, but you can adjust them to suit your taste (and what’s in the fridge). Replace the beef with another protein (pork, turkey, chicken, or Italian sausage!) and top with your favorite cheese.

It’s very easy! Just cut off the top (we like to use a small knife to cut around the stem, just like you would when carving a pumpkin) and remove the core and seeds. We recommend turning the peppers over the water and touching them to remove excess seeds. You can also try washing the peppers, but you don’t have to. (Also, if there are a few eggs left in it, no big deal!)
You can, but we don’t want to. It’s easier to stuff peppers when they’re raw, and so they keep their shape when you cook them. We like it soft, but not too soft!

The bottom of this recipe uses 6 bell peppers cut in half lengthwise. Although some recipes cut the top, there are a few reasons why I cut it down a bit.

If you want to jazz up your food preparation, add some chili powder to your food. After making the above recipe, store in an airtight container in the refrigerator for up to five days. You can also freeze them for up to two months.
To reheat, you can place the cold peppers in the oven and bake at 350°F for 10-15 minutes, or turn them over for 3-4 minutes. If you thaw them in the fridge overnight, it cuts the heating time by 2 minutes.
